1 sweet potato, roasted
1 scoop (30g) plain protein powder
1 large handful (about 1 cup/45g) spinach (or any variety of leafy greens)
1 cup (240ml) unsweetened coconut milk
1/2 teaspoon cinnamon1 teaspoon vanilla
3-4 ice cubes
Place all ingredients in a blender and blend until smooth.
Tip: To roast the sweet potato, preheat oven to 425 degrees F (220C). Scrub potato and prick with a fork 2 to 3 times. Place on a baking sheet lined with foil. Cook for 45 to 60 minutes until potato is easily pierced with a fork. Let cool, store in the fridge. Peel off skin before using.
