Being gluten free AND intolerant to pumpkin AND eggs during fall is pretty much torture. I made this delicious gluten free, vegan apple cinnamon crisp that satisfies all my fall cravings! Try it out and let me know what you think :)
2 apples, chopped
1/2 teaspoon cinnamon
1/4 cup coconut oil, melted
5 drops liquid stevia
1 3oz Bobo's Oat Bar (I prefer Maple Pecan), crumbled
Preheat oven to 425 degrees.
Mix coconut oil with cinnamon and stevia and stir.
In a large bowl, mix together the coconut oil / cinnamon / stevia mixture with the chopped apples, make sure all of the apples are evenly coated. Add the crumbled oat bar to the mixture and stir.
Place mixture in a glass container and place in the oven, bake for 15 to 20 minutes.
Serve and enjoy!
